Chinese Chicken Breasts in Honey Soy Sauce with Vegetable Fried Rice

Ingredients
- For the Chicken :
- 2 chicken breasts
- 3 tsp ginger garlic paste
- 3 tbsp dark soy sauce
- 1 tsp white vinegar
- 1 tbsp organic honey
- 2 tsp roughly crushed black pepper powder
- 3 tsp red chilli sauce
- 2 tsp schezwan sauce
- 2 tsp oil
- salt to taste
- For the Rice :
- 2 cups rice
- 2 cups of mixed, cut vegetables like capsicum, carrots, cabbage, spring onions
- 3 tsp ginger garlic paste
- 3 tsp red chilli sauce
- 3 tsp soy sauce
- 3 tsp schezwan sauce
- 1 maggi tastemaker cube
- 2 tsp tomato ketchup
- salt to taste
- 1 tbsp oil
Instructions
- For the Chicken :
- Make deep slits in both the chicken breasts.
- Marinate the chicken with the ginger garlic pastes and the sauces for an hour.
- In a pan, heat oil, add in the chicken breasts along with 1/2 a cup of water, honey, vinegar, salt and pepper.
- Cover and cook for half and hour, turning the chicken once after 10 minutes.
- By now, the sauce should turn a little thick and should nicely glaze the chicken breasts.
- Switch off the gas and keep it aside ready for serving.
- For the Vegetable Fried Rice.:
- Cook the rice with double the quantity of water for 15 minutes on high heat in a microwave.
- Keep aside to cool.
- In a pan, heat the oil, add the ginger garlic paste, spring onions and the other vegetable.
- Stir and add all the sauces and the maggi tastemaker.
- Cover and cook till the vegetables are almost done.
- Add the cooked rice and salt to taste.
- Mix well and cook for another five minutes.
- Serve hot along with the chicken breast. Note : Just before serving, warm up the chicken so that the sauce coats it really well.
