Ingredients
- 1/2 kg suran/elephant yam washed, peeled and cut into medium sized pieces
- 1 cup groundnuts soaked overnight or at least 3-4 hours
- 1/2 cup grated coconut
- 2 medium sliced onions
- 4-5 pods of peeled garlic
- 1/2 inch ginger
- 1 tsp haldi/turmeric powder
- 1/2 tsp rai/mustard seeds
- 1/2 tsp hing/asafoetida
- 1 tbsp oil
- 1 tsp garam masala powder
- 1 tsp dhania powder
- 1 tsp red chilli powder
- 2-3 kokum/ amsool
- salt to taste
- 1 tsp jaggery
- 1.5 cups water
- Cut coriander leaves
Instructions
- In a kadhai, take a little oil and roast the coconut, onions, ginger and garlic till nice and brown. Let it cool a bit and then grind in a mixie to a fine paste with the help of a little water.
- In a cooker, heat oil, make a tadka of rai, haldi, hing.
- Add in the above paste, red chilli powder, garam masala powder, dhania powder.
- Put in the suran and the soaked groundnuts.
- Add the amsool/kokum, salt, jaggery and water. Put on the lid and cook only for 1 whistle. Switch off gas.
- Serve hot garnished with cut coriander leaves, after the pressure is released. Tastes best with garama garam rotis/phulkas/chapatis.
