Gajar ka Halwa!!!

Thandi ka season aur Gajar ka Halwa na banaya toh laanat hai! This is the time you get delicious, juicy, red carrots in plenty, just begging to be made into a halwa.

So why not start this brand new year, with this extremely easy, but delicious Gajar Halwa!

Ingredients

1/2 kg red carrots grated
1.5 cups milk with malai
4 tbsp sugar
cardamom powder
few sticks of kesar / saffron
raisins, cashews, almonds ...dry fruits of your choice
2 tsp ghee

Instructions

In a non-stick kadhai, add the grated carrots.
Mix the sugar and the milk with malai to the carrots .
Cook for 10 minutes.
Uncover and stir in between.
The liquid will start solidifying after a while. Add in the dry fruits of your choice, cardamom powder and saffron.
Keep on stirring on medium heat till all liquid evaporates and the halwa is semi-dry.
The reason I've not used khoya but milk directly is that it gives a nice, grainy texture to the halwa, plus it's readily available at home unlike khoya.
Garnish and serve as a sweet dish along with your main meal, or as a dessert after your meal.
