Meethe Sikke or Sweet Discs is a name that I’ve coined for this recipe which happened quite by accident! But the end result is a super-yummy, flaky, crispy and soft treat that I’m 100% sure will be liked by all! It is actually a combination of the malpua, anarase, shankarpali and paakaatle chirote!! Sometimes, experiments are disastrous…but sometimes, quite by accident you make something which is so supremely delicious, that you feel like patting yourself on the back for it! Ingredients
- 2 cups maida/ refined white flour
- 1 cup besan/ chickpea flour
- 2 cups sugar
- 3/4 cup ghee
- chopped dry fruits
- 1 tsp cardamom powder
- oil for deep frying
- 2 1/2 cups water
- A few strands of saffron
Instructions
- Boil 1 cup water along with the ghee and 1 cup sugar for 5-6 minutes, till the sugar melts completely. Let it cool down.
- Mix maida, besan and cardamom powder in a big bowl. Use the above sweet syrup for making a dough like the one we make for puris.
- Take 1 1/2 cup water, add 1 cup sugar to it and boil till it thickens slightly. Mix it with the remaining sugar syrup which we used to make the dough, and keep aside.
- Heat oil in a kadhai. Divide the dough into 22-24 parts. Roll out each one into a round disc.
- Deep fry till golden brown on both sides.
- Immerse the fried discs into the sugar syrup.
- The syrup will be absorbed by the discs after a while. The sugar will also crystallize on some.
- Garnish with saffron and chopped dry fruits before serving.
- Bite into a Meetha Sikka which is flaky, crisp and soft at the same time!
