Appe is a Maharashtrian name for dumplings cooked with various recipes in an Appe pan. As the pan is non-stick, it requires very little oil and is a much, much healthier option to deep frying. I make sabudana vadas, medu vadas and mixed dal vadas too, in this pan. The recipe posted here for Mixed Pulses Appe comprises of five dals….Udad Dal, Masoor Dal, Chana Dal, Moong Dal and Tuvar Dal. So not only do you get your daily dose of protein, but you can also eat as many as you want as they are relatively oil-free! Pair them up with the dip/ sauce/ chutney of your choice and your stomach is happy and full till lunch-time comes by.

Ingredients
- 1/2 cup each of toor dal, moong dal, udad dal, masoor dal, chana dal.
- 1/2 tsp methi/fenugreek seeds
- 3/4 green chillies
- 1/2 inch of ginger
- salt to taste
- oil to grease the appe pan
Instructions
- Soak the dals with methi seeds in water for 4-5 hours.
- Grind with salt, green chillies and ginger into a thickish batter.
- Cover and keep overnight in a warm place for fermenting overnight. (I keep it in the microwave.)
- Next morning, the batter will have almost doubled in size.
- Heat the appe pan. Pour a few drops oil into each section. Use a spoon to fill in the batter.
- Cover and cook for a 3-4 minutes. After they are golden on one side, turn over the appe and cover till they are cooked from that side too.
- Serve with the dip/chutney/ketchup of your choice.
- I have served it with tomato ketchup and a coconut-garlic-red chilli chutney.
- Enjoy while hot.
